Here's an easy healthy apple pie filling recipe that's ideal for recipes like apple pie, cobbler, and even as a topping for ice cream! It’s so tasty that no one will realize that it’s sugar free.

How to make healthy apple pie filling
1. Place the chopped apples, lemon juice, and 1 cup water in a bowl. Toss to prevent apples from browning.
2. In a medium saucepan, whisk together sweetener, corn starch, spices, and 1 cup water until well blended.
3. Add the chopped apples to saucepan. Cook over medium-high heat, stirring frequently until the mixture starts to boil.
4. Turn down the heat to medium. Simmer for 10 to 12 minutes, stirring frequently to get rid of any lumps. Cook until the apples are tender but not mushy. If the mixture gets too thick, stir in 1/2 cup of water at a time until you reach the desired consistency.
5. Allow apple pie filling to cool before using in most recipes.
6. Store in an airtight container in the refrigerator.

Can I make apple pie filling without cornstarch?
Yes! If you need to avoid corn products, here are some options:
● Use rice starch or fine rice flour. Both are terrific, gluten-free products that can be used to thicken stews and gravies.
● Try tapioca starch. I’ve read that you use twice as much tapioca starch than cornstarch, so 1/2 cup in this recipe.
That sounds like a lot, so maybe start with 1/4 cup and work your way up.
If the thickener is making the apple pie filling too thick, add more water.
